Fall Harvest Chicken with Butternut Squash and Apple

This is a perfect fall recipe for baby.  The apple adds a little sweetness and the cinnamon adds a little spice.Baby Food - Fall Harvest - Chicken with Butternut Squash and Apple Puree

Ingredients:

  • 1/2 a large butternut squash – skin and seeds removed, cut into 1 inch cubed pieces
  • 1/2 a large apple – peeled, cored, cut into 1 inch cubed pieces
  • 2 ounces of boneless, skinless chicken breast
  • 1/4 teaspoon cinnamon

Double the recipe and freeze remaining portions for busy nights!

Directions:

Fill a medium pot half full with water.  Bring water to a boil.  Add butternut squash to boiling water and allow to boil for 5 minutes.  Add the uncooked chicken breast to the boiling pot.  Boil chicken and squash for another 10 minutes. Squash should be tender and chicken should be cooked through (no pink).  Add apple chucks and cook for 2 minutes.  Remove from heat, reserve 1 cup of water and drain the rest.  Using a blender or food processor, puree chicken, squash and apples with a 1/4 teaspoon of ground cinnamon.  Add reserved water until you reach your designed consistency.  Let cool to appropriate temperature before feeding to baby.

Makes about (4) 4-ounce servings
