Chicken with Purple Potato and Pear

20131022-225145.jpgI love this recipe because it provides some color variety for my Littlest Foodie!

PURPLE potatoes???  Yes, and while they taste like any other potato, they are full of antioxidants.  The variety of purple potato I use is about the size of a small redskin and when peeled, they are a beautiful and very vivid color purple.


  • ¾ cup of water
  • 2 oz of chicken breast or a chicken breast tender
  • 1 purple potato – peeled and sliced into ¼ inch thick slices
  • 1 pear – peel, cored, cut into chunks


In a small pan add water, chicken and potato.  Cook for 5 minutes.  Add pear and cook until chicken is cooked through and potatoes are tender (5-7 minutes).  Pour mixture into food processor or blender and blend to desired consistency.  Add breast milk, formula or water to get to get desired consistency.

Makes about 1 cup (give or take depending on the size of the potato and the pear).
