Delicious and Nutritious Meals for Your Littlest Foodie!
Zucchini and banana make a wonderfully flavorful combination. Think zucchini/banana bread! Here’s a healthy blend for your Littlest Foodie that’s reminiscent of the delicious, but sugar and butter loaded bread!
While rice is cooking (usually takes about 40 minutes), steam zucchini. I filled a large pot that has a steamer insert with about 2 inches of water, brought the water to a boil, filled the steamer insert with the chopped zucchini rounds, covered and steamed until the zucchini was tender (about 10 minutes).
Add ¼ cup of cooked rice, 1/3 of a banana and the steamed zucchini to a blender or food processor with the desired amount liquid (water, formula or breast milk). Blend until you reach your desired consistency and serve once cool enough for your Little Foodie to eat.
