Gobble, Gooble! Pumpkin, Banana Spiced Oatmeal

The deliciousness of roasted banana combined with pumpkin puree and pumpkin pie spice makes this oatmeal a fall and winter Gobble, Gobble! Pumpkin Spiced Oatmeal - LittlestFoodie.combreakfast staple!  The following recipe makes enough for about 3 baby-sized servings and 3 adult servings, so adjust accordingly if your Littlest Foodie will be the only one enjoying…


  • 2 cups of water
  • 3 ripe bananas – peeled and sliced into inch thick slices
  • 1 cup thick rolled oats (not instant)
  • 1 cup pumpkin puree – you can used canned or homemade.  For homemade check out my tip here: Homemade Pumpkin Puree
  • 1 tsp pumpkin pie spice


Preheat oven to 400 degrees.  Line a cookie sheet with aluminum foil or parchment paper and spray lightly with cooking spray.  Evenly space banana slices on cookie sheet and roast in oven for 25 minutes.

Bring 2 cups of water to a boil.  Stir in 1 cup of thick rolled oats (Bob’s Red Mill Organic are my favorite) and reduce heat to medium.  Cook for 10-15 minutes, or according to package instructions.

Combine pumpkin puree, pumpkin pie spice, oatmeal and roasted banana in a food processor.   Process until banana, pumpkin and spice is well mixed with oatmeal – about 30 seconds. If your Littlest Foodie needs a smoother oatmeal than you do, remove about 3 cups (the adult portion) and continue processing the baby portion until you reach the desired consistency.
