Delicious and Nutritious Meals for Your Littlest Foodie!
Heat olive oil in a small skillet at medium heat. Add steak and brown slightly (2 minutes/side). Add potatoes and enough water to just cover potatoes while cooking (about a cup). Remove steak from skillet once cooked to well done (no pink). Continue cooking potatoes until tender (about 12-15 minutes). Combine steak, potatoes, 1/4 cup of reserved water from cooking and butter in a food processor or blender. If necessary, blend with a couple of tablespoons of water, formula or breast milk to reach desired consistency. Serve once it’s cool enough for your Littlest Foodie to eat.
Here’s my favorite steak marinade (enough for 2 steaks):
In a sealable dish or Ziploc bag, combine soy sauce, lime juice and olive oil. Add steaks and season with garlic powder, seasoning salt and ginger. Refrigerate for a couple of hours or overnight. Bring steaks out of fridge about a half our before cooking. Through on grill and cook to desired doneness.
