Delicious and Nutritious Meals for Your Littlest Foodie!
My Littlest Foodie loves mangos and the sweetness of ripe mangos mask the flavor of extra-healthy foods like spinach. This is one seriously yummy baby food puree and great way to get your Littlest Foodie’s eating their leafy greens! The salmon can be substituted with chicken.
Heat olive oil in a small skillet on medium heat. Add salmon and cook for 2 minutes on first side. Flip and cook until cooked through. While cooking, I flake the salmon for my Littlest Foodie to double check for bones and to check doneness.
While salmon is cooking add mango, spinach and water to a microwave safe bowl. Cover bowl and microwave on high for 1 minute. Spinach should be slightly wilted – if it isn’t, cook for an additional 30 seconds.
Combine salmon, mango, spinach and cooking water in a blender and blend until smooth. Add more water or formula/breast milk to thin out puree if desired.

Heat olive oil over medium heat. Add salmon filets and cook 3 minutes on first side. Flip and add marinade. Cook until salmon reaches your desired doneness. Remove from heat and plate with a garnish of mango and red onion.
