Breakfast Scramble

A yummy breakfast scramble that takes just minutes to cook up.  Even makes for a great dinner on a busy night.

Ingredients:

  • 1/4 cup of your Littlest Foodie’s favorite veggies like zucchini, mushrooms, broccoli – thinly diced
  • 1 egg
  • 2 tablespoons of plain yogurt
  • 1 tsp olive oil

Directions:

Heat olive oil in a small frying pan over medium heat.  Add veggies and sauté until tender (about 3 minutes).

Combine egg and yogurt in a small bowl and beat until smooth.  Add egg mixture to veggies in the frying pan and scramble until cooked through (about 2 minutes).  Let cool to safe temperature and serve!
