Simple Salmon Squash Baby Food

Ingredients:

  • 1/4 of a butternut squash – peeled, seeds removed and cut into 1/2 inch chunks
  • 2 tsp melted butter
  • 1 tsp pure vanilla extract
  • 1/4 tsp cinnamon
  • 4 ounces of salmon

Directions:

Preheat oven to 400 degrees.  In a large bowl, mix together butternut squash, butter, vanilla and cinnamon to coat squash.  Pour butternut squash mixture into an oven-safe casserole dish (you can also use a cookie sheet).  Roast for 30 minutes.

Heat a small skillet on medium heat with a little olive oil.  Add salmon and cook until cooked through (about 3 minutes on each side).  Remove skin and flake to check for any bones.

Add salmon and butternut squash to a blender or food processor and puree.  You’ll probably need to add water, formula or breast milk to thin.  Serve when cool enough for your Littlest Foodie.

For a grown up meal, cook all butternut squash like above (just quadruple the recipe).  It makes a DELICIOUS side dish!  And cooked salmon together with your Littlest Foodie’s portion.  Just don’t puree 🙂
