Delicious and Nutritious Meals for Your Littlest Foodie!
As we approach Thanksgiving my Littlest Foodie is enjoying Thanksgiving-like meals. This one was a hit. I used ground turkey, but on Thanksgiving Day I’ll use a little of that beautiful bird we’ll be cooking up!
Heat a small skillet on medium heat with olive oil. Cook ground turkey in the skillet until cooked through. Cook quinoa or rice according to package instructions — I brought 1 cup of water to a boil, added a 1/2 cup of quinoa, reduced heat, covered and cooked for about 10 minutes until water was absorbed. I ended up with extra quinoa which refrigerates well for a couple days.
In a small sauce pan, bring 1 cup of water to a boil, add cranberries and apples and cook for about 10 minutes until cranberries have softened. Combine all ingredients in a blender or food processor, including some of the cranberry/apple cooking water. Blend until you reach desired consistency. Serve to your Littlest Foodie once cooled.
