Delicious and Nutritious Meals for Your Littlest Foodie!
I love using quinoa in my Littlest Foodie’s purees. Not only does it have more nutritional value than rice, but it’s a cinch to cook! This recipe makes five 6-ounce servings – great to make on a Sunday to get you through the week!
I was short on time making this recipe and really didn’t feel like cooking all the ingredients separately, so I tried with just throwing all the ingredients in the same pan and it turned out wonderfully!

Add water to a medium-size sauce pan. Bring water to a boil at medium-high heat. Add chicken and quinoa. Cover and cook for 5 minutes. Add apples and zucchini and replace cover and cook for another 8 minutes, mix a few times and add more water if needed. Check to see that zucchini and apples have softened and chicken is cooked through. Add the chicken, zucchini mixture and cheese to a blender or food processor and puree. Serve it up to your Littlest Foodie once it’s cooled to an appropriate temperature.
