Chicken with Zucchini, Apple and Quinoa

Littlest Foodie's Chicken, Zucchini and Apple Baby Food RecipeI love using quinoa in my Littlest Foodie’s purees.  Not only does it have more nutritional value than rice, but it’s a cinch to cook!  This recipe makes five 6-ounce servings – great to make on a Sunday to get you through the week!

I was short on time making this recipe and really didn’t feel like cooking all the ingredients separately, so I tried with just throwing all the ingredients in the same pan and it turned out wonderfully!


  • 1 chicken breast (about 6 ounces)
  • 1/4 cup uncooked quinoa
  • 1 cup water
  • 2 sweet apples – cored, peeled and cut into 1 inch chunks
  • 1 green zucchini – trimmed and sliced into 1/2 inch rounds
  • 2 tablespoons shredded mild cheddar cheese (optional)

Add water to a medium-size sauce pan.  Bring water to a boil at medium-high heat.  Add chicken and quinoa.  Cover and cook for 5 minutes.  Add apples and zucchini and replace cover and cook for another 8 minutes, mix a few times and add more water if needed.  Check to see that zucchini and apples have softened and chicken is cooked through.  Add the chicken, zucchini mixture and cheese to a blender or food processor and puree.  Serve it up to your Littlest Foodie once it’s cooled to an appropriate temperature.

Makes about five 6 ounce servings.
