Delicious and Nutritious Meals for Your Littlest Foodie!
My Littlest Foodie is really starting to get interested in feeding himself. It’s wonderful, but makes me a little feel a little melancholy that he’s growing up and becoming this amazing and independent little person.
I’ve found that produce as finger food can be a little tricky. We’ve tried bananas, avocado and mango and he quickly turns them to mush with his ham-fisted baby fingers. Today I tried roasting small pieces of butternut squash and they turned into a perfect finger food – firm enough that a Littlest Foodie’s fingers can grasp, but soft enough for easy chewing and swallowing.
Preheat oven to 400 degrees. Line a baking sheet with parchment paper or aluminum foil. Mix chopped butternut squash with olive oil, vanilla and spice.
Spread over baking sheet and bake for 20 minutes. Butternut squash should begin to brown and be tender.
Serve once cooled to a baby appropriate temperature. Refrigerate, reheat and serve leftovers for up to 2 days (or serve as a side dish for adult foodies :). Enjoy (my Littlest Foodie sure did)!
