We love fish tacos in my house and my Littlest Foodie loves his version of fish tacos too! Add a dash of chili powder and/or cumin to spice it up if your Littlest Foodie is up for it!
Ingredients:
In a small skillet, heat olive oil and 1/4 cup of water over medium heat. Add white fish and corn and cook until white fish is cooked through. Combine fish, corn, mango, avocado, tomato, additional 1/4 cup of water and spices in a blender or food processer and puree.
Makes about 2 6oz servings.
